I have a HORRIBLE sweet tooth. It’s bad. I eat way too much sugar on a daily basis and have no self control when it comes to avoiding or stopping myself. SO things like mug cakes? GENIUS. On top of being a sugar addict I’m also incredible lazy most of the time. Aka if I make a mug cake and it’s amazing and I wan’t another one? I’m too lazy to make another one. Which is honestly the best thing that’s ever come out of being lazy.
Every once in a while I’ll come across a mug cake recipe on Pinterest and think “omg I have to try that!” and then I’ll pin it for later and probably never try it. I think in the last however many years I’ve been on Pinterest, I’ve probably actually tried about 3 different mug cake recipes. And then I see the packets for them in store and am like “OOH!” and then I don’t buy them because I convince myself I can just go home and make them. Honestly.

The first two mug cakes I tried were okay. Actually, I’m pretty sure the first one was a complete disaster? Still have no idea how that happened tbh. I remember the second one working out but it just wasn’t all that impressive. I saw all of these comments just raving about it and I was just thinking, “this is it??”

And then I found this. The BEST vanilla mug cake recipe. It’s sweet and moist and has an icing recipe to go with it. Y’all. I love it. There was a time I was literally making it every day. It was a problem. But, a portion controlled problem. Which is obviously better than a non-portion controlled problem so I just went with it.

I still have yet to try any of her other recipes but I obviously need to because I’m just SO obsessed with this darn mug cake. If I hadn’t just had a Mocha shake from Cubby’s, and wasn’t about to go do a BBG Stronger workout, I’d 1000% be making myself a mug cake right now.
